More game food porn, on account of you asked for it

Don't blame me for game food porn overdose: you insisted.  Our second game-food porn entry this week was nachos. Nachos are simple, delicious and very flexible -- your nachos can be very different from mine -- but the basic elements are the same. You will need tortilla chips -- thicker is better -- some refried beans, salsa, a tomato, an onion -- yes, use a damn Vidalia -- some guacamole, sour cream and whatever else you think goes with nachos:



First, arrange a bunch of tortilla chips in a dish in which you can both bake and serve the nachos. Focus on the edges so you will be able to get ahold of the chips when  the time comes:


 Next, put the refried beans in the middle of the dish, overlapping the chips. I have inexplicably failed to obtain a photograph of this step. Use your imagination. Then, cover the whole mess with shredded cheddar cheese:


Bake that bad boy at 350 degrees for long enough to melt and lightly brown the cheese. To avoid the dreaded over-cooking/cold refried beans combo, you might want to heat the beans in a microwave prior to putting them in the nacho pan:


Because everybody has different tastes, I don't put the various side elements in the actually nachos. I serve the salsa, guacamole, tomatoes, onions, sour cream and whatever the hell else you want -- people like sliced jalapenos -- in bowls on the side so people can add what they like to their nachos.
